By law, the name "savoiardo" is reserved exclusively for the egg biscuit with its characteristic elongated shape, a structure featuring small, regular air bubbles, a sugar coating, and a typical vanilla and lemon flavor. The product must have a moisture content between 4% and 12%. Today, Matilde Vicenzi's Vicenzovo biscuits are distributed worldwide and are used daily as a key ingredient in tiramisu and other spoon desserts.
