Journée internationale des pâtes                                   L'Italie racontée al dente Si l'Italie avait une langue commune dans toutes ses régions, ce serait la pâte. C'est le plat qui unit les dimanches en famille, les trattorias avec nappe en papier et les bars où l'on mange debout entre deux services. Les pâtes sont une simplicité précise : semoule de blé dur, eau, trafilatura al bronzo pour que la sauce adhère et une cuisson qui se termine toujours par le même mot : al dente. Cette semaine, notre produit vedette appartient à une famille au nom illustre : les pâtes.   La "grammaire" des pâtes italiennes Matière première : semoule 100 % italienne. Texture : trafilata al bronzo = pore fin qui enveloppe la sauce. Cuisson : testez une minute avant le temps indiqué sur le paquet ; le centre doit offrir une légère résistance. Eau de cuisson : gardez une demi-tasse pour lier les sauces et ajuster le sel.                 Comment combiner forme et sauce (règle rapide) Longues (spaghetti, linguine) : sauces douces et soyeuses (huile, tomate fine, pesto). Courtes (penne, rigatoni, elicoidali) : sauces avec morceaux (ragù, amatriciana, légumes). Torsadées (fusilli, farfalle) : sauces crémeuses qui "accrochent" (pesto, crème de fromage). Complètes / sans gluten : mêmes règles, en réduisant la cuisson d'1 minute et en testant.                                     Créons ce plat ensemble ! Pâtes au pesto avec burrata et granola de pistache Ingrédients (2 portions) 180–200 g de pâtes longues (tagliatelle/pappardelle). SG/complet si vous préférez. 1 burrata (125–150 g). Zeste fin de ½ citron (optionnel, ça lui va à merveille). Sel fin et poivre noir. Pesto rapide 40 g de basilic frais (feuilles et un peu de tige tendre) 25 g de pistaches décortiquées (ou pignons/d'amandes) 40 g de Parmigiano Reggiano ou Grana Padano, finement râpé 1 petite gousse d'ail (sans germe) 70–80 ml d'AOVE (ajouter petit à petit) 1–2 c. à soupe d'eau de cuisson chaude (pour émulsionner) 1 pincée de sel Granola croustillant aux pistaches 35 g de pistaches décortiquées grossièrement hachées 1 c. à soupe d'AOVE 1 c. à café de miel (ou sirop), optionnel 1 pincée de sel et, si vous aimez, des flocons de piment Préparation (20 minutes) Granola : dans une poêle à feu moyen, faites griller les pistaches avec l'AOVE pendant 2–3 min jusqu'à ce qu'elles dégagent leur parfum. Ajoutez du miel, une pincée de sel et (optionnel) du piment ; remuez 30 s puis étalez sur du papier pour qu'elles deviennent croustillantes. Pesto : mixez basilic, pistache, fromage et ail avec un filet d'huile d'olive vierge extra. Ajoutez plus d'huile jusqu'à obtenir une texture crémeuse. Ajustez le sel. Astuce : ajoutez 1–2 c. à soupe d'eau de cuisson chaude à la fin pour qu'il soit soyeux et adhère bien aux pâtes. Pâtes : cuire dans une grande quantité d'eau avec 10 g de sel par litre. Remuez au début. Goûtez 1 min avant le temps indiqué sur le paquet ; elles doivent être al dente. Réservez ½ verre d'eau de cuisson. Sauté : passez les pâtes égouttées dans une grande poêle, ajoutez le pesto et un peu d'eau de cuisson. Faites sauter 30–60 s jusqu'à napper et faire briller. Dressage : servez, couronnez avec la burrata ouverte, zeste de citron, poivre noir et granola de pistache par-dessus. Un filet d'huile d'olive vierge extra et c'est prêt. Notes et variations Plus vert et léger : remplacez ⅓ du basilic par des épinards baby blanchis 30 s et bien égouttés. Sans produits laitiers : utilisez de la burrata vegan et remplacez le fromage du pesto par 1–2 c. à soupe de levure nutritionnelle + 1 c. à café de miso blanc. Sans gluten : pâtes SG et réduire la cuisson d'1 min ; il est essentiel de lier avec l'eau de cuisson. Protéine extra : ajoutez des lanières de poulet grillé ou des crevettes sautées 1 min à la poêle avant les pâtes. We share with you three easy, original and delicious ideas to use panettone and give it a second life. Pastry pudding Prepare caramel in a pan and pour it over the mold. Cut the panettone (200 grs) and let it soften in a bowl with milk (750 ml of milk) for 10 minutes. Add 4 eggs, sugar and flavourings such as vanilla or coffee. Keep in mind that panettone already has sugar and other ingredients so you will need little else for a spectacular result. Stir the mixture and crumble it more or less, this depends on your taste. Pour it into the mould. Cover with aluminium foil, place on a larger baking tray and fill halfway with water to cook in a bain-marie. Let the pan rest for 30 minutes! Panettone muesli As easy as crumbling the panettone and putting it in an Air Fryer at 80/90 ºC until it is crunchy. Mix it with yogurt and fruit salad. An original and very complete breakfast! Panettone French Toast Infuse 1 litre of milk in a saucepan with 4 tablespoons of sugar, the peel of a lemon and 3 cinnamon sticks. Bring to a boil. Let it rest and cool. We cut slices of panettone of approximately 3 cm and place them on a tray. Pour the warm infused milk over the panettone and let it soak. We coat it with beaten egg and fry it in plenty of oil. Once the slices are golden, drain them and place them on kitchen paper to absorb the excess oil. Linguine with lemon and mushrooms Ingredients 2 packages of linguine al limone Casa Losito 600g of clams 100ml of oil 3 cloves of garlic, finely chopped 2 chillies 1 heaping tablespoon of flour 100ml of wine 30ml sherry Chopped parsley Preparation Two hours before making the recipe, soak the clams in a bowl with very cold water and salt. After this time, sauté the garlic and chillies in the oil but without letting them brown. Add the flour, stir for a couple of minutes and add the wine and sherry. Cook for a couple more minutes until it thickens and add the clams. Cook until they open, add the chopped parsley and pour over the pasta. Stir to coat the pasta well and serve. Linguine with pesto, basil and colorful tomatoes .   Ingredients 2 packages of 250 grams of linguine with pesto Casa Losito 3 cloves garlic extra virgin olive oil 200 g. colored cherry tomatoes a handful of fresh basil Salt pepper Preparation Cook the pasta as indicated on the package, Cut the cherry tomatoes in half. Peel and slice the garlic. Put the garlic in the pan with a splash of olive oil so that it browns as little as possible, add the tomatoes and sauté over high heat without letting the garlic burn, the tomatoes should not fall apart. Once the pasta is done, add it to the pan and sauté it just enough to mix the flavours and colours. At the end of everything add a handful of fresh basil chopped not too finely. Serve with freshly grated Parmesan on top and a touch of freshly ground pepper. Tricolor linguine with lemon   Ingredients 2 packages of Casa Losito tricolor linguine. 50 gr of butter Black pepper A lemon 110 gr grated cheese (parmesan, pecorino or manchego) A sprig of thyme 10 gr of butter 250 ml of pasta cooking water. Preparation We cook the pasta in salted water. In a large frying pan, add the 50 g of butter, the black pepper and the grated lemon peel. We extract the juice from the lemon and add it to the pan and cook everything. We grate the cheese and before removing the pasta we take out 250 ml of the cooking water. We add the cheese to this water, stirring quickly with a whisk so that no lumps form. We add 10 gr of butter. Drain the pasta and add it to the pan with the thyme.
