Guanciale is the ingredient without which carbonara, amatriciana, and gricia cannot exist. It is cured pork jowl (not to be confused with pancetta or bacon) that provides a more intense, sweet, and fatty flavor than any other Italian cured meat. Its fat is the base of classic Roman sauces.
