Paccheri alla sorrentina

We are going to need...
✔️A package of Paccheri Ondulati €2 #CasaLosito losito house
✔️480 gr of whole peeled tomatoes €1.25
✔️1 medium carrot €0.17
✔️1/2 medium onion €0.13
✔️1/2 branch of celery €0.08
✔️1 fresh mozzarella of 250 gr (if possible, buffalo) €2.08
✔️25 gr of freshly grated Parmesan €0.83
✔️1 handful of fresh basil €0.42
✔️Extra Virgin Olive Oil €0.50
✔️Salt and pepper to taste €0.05

Let's cook!
  1. Cook the Paccheri according to the package instructions (10/12 minutes) until al dente. Drain and reserve.

  2. Meanwhile, chop the onion, celery and carrot to make the sauce. Put a pan over low heat with a splash of EVOO and sauté the vegetables until soft, approximately 7 minutes. Drain the water from the canned tomatoes and add them to the pan along with a pinch of salt and black pepper.

  3. When everything is integrated and cooked, blend the ingredients until there is a uniform sauce.

  4. In an ovenproof pan, place the Paccheri and drizzle with the sauce until it covers all the pasta. Spread grated Parmesan and place slices of mozzarella. Gratin for 5 to 10 minutes, or until cheeses begin to melt and brown.

  5. Serve hot accompanied by basil and enjoy such an aromatic and delicious dish. yum!
