Cook the Paccheri according to the package instructions (10/12 minutes) until al dente. Drain and reserve.

Meanwhile, chop the onion, celery and carrot to make the sauce. Put a pan over low heat with a splash of EVOO and sauté the vegetables until soft, approximately 7 minutes. Drain the water from the canned tomatoes and add them to the pan along with a pinch of salt and black pepper.

When everything is integrated and cooked, blend the ingredients until there is a uniform sauce.

In an ovenproof pan, place the Paccheri and drizzle with the sauce until it covers all the pasta. Spread grated Parmesan and place slices of mozzarella. Gratin for 5 to 10 minutes, or until cheeses begin to melt and brown.
